I must say, I was a bit concerned about how I received the salt fish in the mail. I cautiously cooked the salt fish this morning, and was AMAZED and very pleasantly surprised at the excellent quality of this salt fish. I did not find one single bone in the fish, and here I was preparing myself for the long drawn out process of having to pull the fish apart and remove all the bones. I WAS VERY HAPPY that this salt fish was of such excellent quality, and I THANK the seller for making sure the quality was excellent. THANK YOU. I am VERY HAPPY and cannot wait to have my ackee and saltfish :)

Hard to find item is better than at the Italian deli... Jan 14, 2012
By Tek2000 The only local Italian deli sold out of this for Christmas. It was a real treat to find it online. Two nice smaller (than I usually buy) fillets arrived, wrapped in plastic with a (totally melted) ice pack -- you shouldn't really need an ice pack for salted fish, should you? It was packed in a lot of styrofoam peanuts which also really seems unnecessary for fish. Maybe we could cut back on the shipping charges somehow?
I cover mine in water and bring just to a boil then quickly drain. It takes 3 times with the deli cod, but only 2 times with this. It's a bit more delicate (due to smaller fish?). I always break mine apart by hand and feel for bones, and just like the deli's, this had exactly one bone in it. It's like they want you to have to keep checking for bones. There's always just one.

By Indy John I am the family butcher who at home, salt-cures and smokes the bacons, hams and variety meats for my family and a few friends. This Salt Cured Cod was bought online again, as this Cod is not on my grocer's shelf.
A simple man's recipe; Rinse 1/2 the cod, then with a sturdy knife, cut the cod into polite size pieces. In a large bowl, cover the cod with water and refrigerate. Change water and turn cod twice daily, until you soak out enough salt, taste the salt level after 4th water change.
In a large skillet, melt a stick of butter. Drain a jar of roasted sweet peppers and cut into polite size pieces. Add cod and peppers to the warm skillet. Bring to slow simmer for 10 minutes.
Serve with jasmine rice or a baguette type bread. Leftovers reheat quite well.
